Inspired by Japanese Curry Bread (a.k.a. Kare Pan), this pizza is loaded with flavorful curry gravy, thinly-shaved beef, pickled ginger, and small chunks of potatoes and carrots. Using store-bought blocks of curry-roux, getting all the elements for this pizza together is easy and doesn’t take much work. The final result delivers a punch of flavor that sticks to the ribs and is sure to please family and friends alike.
Note: These days you can find Japanese curry roux at most grocery stores; I used S&B Golden Curry brand. Pickled ginger is available at most Asian markets or can be ordered online. If your store doesn’t sell thinly shaved beef, then you can buy steak and put it in the freezer for a few minutes to firm it up before slicing very thinly.
Beef Japanese Curry Pizza (Kare Pizza)
Equipment
- Home pizza oven (I used an Ooni Volt 12.)
- Pizza peel
- Stand mixer with dough hook attachment (or a regular mixing bowl if you don't have a stand mixer)
Ingredients
- 1 batch Neapolitan pizza dough prepared
For the Curry Gravy
- 1/2 yellow onion diced finely
- 1 carrot 1/4 inch dice
- 1 Yukon gold potato peeled, 1/4 inch dice
- 2 cloves garlic minced
- 2 cups water or low-sodium chicken broth plus more to adjust gravy thickness
- 1 tsp ketchup
- 1 tsp soy sauce
- 1 tsp honey
- 4 bricks Japanese curry roux Golden Curry brand
- 2 tbsp neutral cooking oil
For topping the pizzas:
- 8 oz Thinly shaved steak ribeye, eye round, or similar
- Japanese pickled ginger (gari)
- Kosher salt
- 2 tbsp Cilantro chopped (optional)
Instructions
- Begin by preparing the dough. Don't forget to remove it from the fridge 3 hours before cooking.
For making the curry:
- In a 10-inch skillet, heat cooking oil on medium heat until shimmering.
- Saute onions for 5 minutes until translucent but not browned. Add garlic and saute until softened, about 30 seconds.
- Add carrots, potatoes, and broth or water. Bring to a boil.
- Reduce heat to simmer and cover pan until vegetables are soft, approximately 8 minutes.
- Add curry roux bricks and stir until the roux has dissolved and mixed evenly throughout the mixture. If too thick, add a few tablespoons of water to thin it out.
- Allow curry mixture to cool to room temperature before putting it on the pizza. If it's too thick at room temperature, you can thin it with a small amount of water, but it should still be a bit thickened.
For preparing the pizza
- Preheat your oven to 750°F, or use your home oven at 550°F with a pizza stone preheated for an hour.
- Stretch each dough ball into roughly 12" rounds.
- For each pizza, cover the dough round with room temperature curry gravy along with potato and carrot chunks. Top the pizza with pieces of shaved beef without them overlapping so they can cook well in the oven.
- Sprinkle a little bit of salt on each piece of beef. Top with desired amount of pickled ginger.
- Bake in the pizza oven for roughly 90 seconds while rotating to get desired browning. If using a home kitchen oven, this process will take longer—just keep an eye on the pizza and rotate as needed for around 4-5 minutes.
- Remove pizza from oven and optionally top with chopped cilantro.
- Enjoy, and don't burn your mouth on those potatoes!
